Ingredients
300g Gluten-Free Vegan Bread Flour Mix with Reduced Fiber (for yeast bread)
3g dry yeast
1g sodium bicarbonate – baking soda
4g salt (or preferred)
275g lukewarm water
20g fresh lemon juice
Coconut oil (or preferred) for brushing

Method

Step 1
In a big bowl combine 275g lukewarm water, 20g fresh lemon juice, 4g salt, 3g dry yeast,
and 1g baking soda.
Add Gluten-free Vegan Bread Flour Mix with Reduced Fiber and mix well together.

Step 2
Pour the mixture into a pan – 12x21 cm.
With a wet spatula, smooth out the top of the dough.
Cover the pan and leave it in a warm place to rise for 40-50 minutes or until its doubled in
size.
Meanwhile preheat the oven to 210C.

Step 3
Before putting the dough in the oven brush the top with oil.
Place the dough in the oven for 55 minutes or until browned lightly.

Step 4
Leave it to cool on a rack.

Store in a cool, dry place.
It can be freezed.
