Express Flour Mix for Unleavened Pastries

Ingredients for the dough
150g Express Flour Mix for Unleavened Pastries
70g sugar substitute (erythritol, coconut sugar, natural sweetener)
1g salt
10g fresh lemon zest
10g fresh lemon juice
140g water
Coconut oil for brushing

Ingredients for the filling
35g cocoa powder
50g sugar substitute (erythritol, coconut sugar, natural sweetener)
60g water

Method

Step 1
Preheat the oven to 160C.
Line a large baking tray with baking paper.

Step 2
In a large bowl combine the ingredients for the dough: water, fresh lemon juice and zest, salt
and sugar substitute.
Add the Express Flour Mix for Unleavened Pastries and mix it well together.
The dough will be soft and runny (do not add any more flour to it).
Leave the dough to rest for 5-10 minutes (it will become more kneadable).

Step 3
While the dough rests in a separate bowl mix all the ingredients for the filling.

Step 4
After 5-10 minutes rest place the dough on a lightly floured surface and roll out flat into a
rectangle form about 5-10mm thick.
Spread the filling mixture all over the dough evenly.
Roll up the dough starting from the shorter side.
Cut it into even pieces, approximately 10 pieces.

Step 5
Place the pieces on the baking tray.
Brush the sides with coconut oil.
Bake for 20-25 minutes or until golden brown.

Step 6
Transfer the scrolls to a wire rack to cool.
Dust it with icing sugar.

Store in a cool, dry place,
