Doughnut Flour Mix

Doughnut Flour Mix - Vegan – Gluten-free

Ingredients
150g Doughnut Flour Mix
160g lukewarm water
5g fresh lemon juice
5g lemon zest
12g sugar substitute (erythritol, coconut sugar, natural sweetener)
1g salt
1 tsp vanilla essence
Coconut oil for frying
Icing sugar for dusting
Method
Step 1
In a large bowl combine lukewarm water, fresh lemon juice, sugar substitute, salt, lemon
zest, vanilla essence.
Add the Doughnut Flour Mix combine well and knead for 2 minutes.
Step 2
Leave the dough to rest for 5 minutes.
Step 3
Meanwhile heat the coconut oil in a large frying pan over medium heat.
Step 4
After 5 minutes rest, place the dough on a lightly floured surface and roll out flat to 1 cm
thick.
Either use a doughnut cutter shape or use a glass/mug (8 cm wide) for the big hole and use a
bottlecap (3 cm wide) for the middle small hole.
Cut out 7 (or as much you can) big circles and in the middle of those circles cut out the small
circles to get the doughnut shape.
Step 5
Place the dough in the frying pan in batches and cook each side for 2-2.5 minutes or until
golden brown.
Place the doughnut on a paper towel to soak up any excess oil.
Step 6
Dust with icing sugar and serve with jam or custard or simply on its own.
