Creamy root vegetable sauce mix with sweetener

Ingredients
1 kg zucchini (cut up into circles)
80g Creamy Root Vegetable Sauce Mix
80g coconut cream
15g fresh lemon juice
10g Dijon mustard
600 ml water
Coconut oil
Rice – preferred
Method
Step 1
Halve the zucchini and slice it up into circles.
Step 2
Heat the coconut oil in a medium pan over medium heat.
Add the zucchini and cook for 5 minutes.
Step 3
In a large bowl combine 80g coconut cream, 15g fresh lemon juice, 600 ml water.
Add 10g Dijon mustard and 80g Creamy Root Vegetable Sauce Mix and whisk well.
Step 4
Add the sauce mixture to the pan, stir often and cook for another 10-15 minutes.
Step 5
Meanwhile cook the rice according to packet instructions.
Step 6
Serve the sauce over the rice.
