Apple-Poppy Seed Slice – Vegan + Gluten-free

Ingredients
200g Sponge Cake Flour Mix with Buckwheat
50g poppy seed – grinded or soaked
15g sugar substitute (erythritol, coconut sugar, natural sweetener)
1 full lemon’s zest
30g fresh lemon juice
1 tsp vanilla aroma
1 apple – shredded
200g water
Method
Step 1
Preheat the oven to 180C.
Grease a 27 cm form cake pan.
Step 2
Poppy seed preparation: 1- Grind with 15g sugar substitute
or
2- Soak with 15g sugar in milk substitute
Step 3
In a large bowl combine the water, fresh lemon juice, shredded apple, lemon zest, vanilla
aroma.
Add the poppy seed and Sponge Cake Flour Mix with Buckwheat and mix it well together
with a handheld mixer.
Step 4
Pour the mixture in the cake pan and bake for 19-21 minutes or until golden brown.
