Spinach-Mushroom Roll – Vegan + Gluten-free

Ingredients for the dough

150g Pizza Flour Mix
2g salt
12g apple cider vinegar
110g lukewarm warm

Ingredients for the filling
50g mushroom – sliced
50g spinach – chopped
1 red onion – diced
1-2 cloves garlic – paste
5g rosemary
25g vegan cheese substitute - shredded

Method

Step 1
Preheat the oven to 180C.
Line a large baking tray with baking paper.

Step 2
In a large mixing bowl, combine all ingredients for the dough starting with the dry ingredients.
Knead them well together for a few minutes.
Leave it to rest while you prepare the ingredients for the filling.

Step 3
Prepare all the ingredients for the filling and combine them in a large bowl.

Step 4
Place the dough on a lightly floured surface and roll out flat into 25x16 cm rectangle.
Spread the filling evenly over the dough but leave 5 mm out around the edges.
Roll it up tightly starting from the longer side.
Cut about 10 even circle pieces.

Step 5
Place the circles on the baking tray one side down and bake for 20-25 minutes or until golden
brown.
