Cinnamon-Apple Pancake with Quinoa Muesli – Vegan + Gluten-free

Ingredients

1 cup Quinoa Muesli with Cinnamon and Apple
2 cups Roll-up Buckwheat Pancake Flour Mix
1 shredded apple
2 tsp cinnamon
1 tbs sugar substitute (erythritol, coconut sugar, natural sweetener)
250ml water
Coconut oil

Method

Step 1
In a large bowl combine Quinoa Muesli with Cinnamon and Apple, Roll-up Buckwheat
Pancake Flour Mix, shredded apple, cinnamon, sugar substitute and water with a handheld
mixer.
The batter become a thick mixture.

Step 2
Heat the oil in a non-stick frying pan over a medium heat.

Step 3
Pour 1⁄4 cup batter onto the pan and cook for 2 minutes on each side or until golden brown.

Step 4
Serve with syrups, jams, fruits or just on its own.
